1. Rinse quinoa thoroughly and put it in a pan with 1 cup of boiling water. Bring to boil, cover and turn the heat down.
  2. Leave for 5-8 mins. Ensure it doesn't stick to pan – if it begins to stick, add more hot water, stir and cover.
  3.  When cooked take off heat.
  4.  Whilst the quinoa is boiling, chop the leaks and wash them.
  5.  Put the coconut oil in a large pan and heat and fry the cumin seeds for one minute.
  6. Add the leaks and gently sauté.  After 2mins add the frozen peas and heat through.
  7. Add the cooked quinoa into the frying pan and stir in contents.
  8. Remove from heat and serve.
